ABSTRAK Peran Fosfolipid Terstruktur dari Lesitin Kedelai Komersial yang Mengandung Asam Lemak Omega-3 dalam Menurunkan Resiko Perlemakan Hati dan Meningkatkan Inkorporasi DHA pada Otak Tikus Sprague dawley Jantan. Fosfolipid terstruktur mengandung asam lemak omega-3 khususnya EPA-DHA merupakan suatu alternatif dalam meningkatkan kestabilan asam lemak omega-3 serta meningkatkan keunggulan sifat bioaktifnya. Fosfolipid terstruktur dalam penelitian ini dihasilkan dari sintesis asidolisis enzimatis lesitin kedelai komersial dengan minyak kaya asam lemak omega-3 dari hasil samping pengalengan ikan tuna, menggunakan enzim lipase R. miehei. Hasil perlakuan terbaik diperoleh dari reaksi asidolisis enzimatis selama 18 jam dengan konsentrasi enzim sebanyak 30%, dimana tingkat inkorporasi EPA-DHA sebesar 127,47 mg/g dan persentase EPA-DHA sebesar 51,04% pada struktur fosfolipid. Pemberian fosfolipid terstruktur berpengaruh nyata (α=0,05) dalam menurunkan tingkat kerusakan sel hati akibat perlemakan hati dan menjaga kestabilan level albumin tikus Sprague dawley jantan karena diet aterogenik. Pemberian fosfolipid terstruktur juga berpengaruh nyata (α=0,05) pada kadar inkorporasi DHA otak namun tidak berpengaruh nyata (α=0,05) pada persentase inkorporasi DHA otak tikus. Kadar inkorporasi DHA di otak tikus adalah sebesar 224,96 mg/g dengan persentase inkorporasi sebesar 17,18%. ABSTRACT Structured Phospholipids From Commercial Soybean Lecithin Containing Omega-3 Fatty Acid Reduce Hepatic Steatosis Risk and Increase Brain DHA Incorporation of Male Sprague dawley Rats. Structured phospholipids containing omega-3 fatty acids, EPA-DHA in particular, is an alternative to improve the stability of omega-3 fatty acids and increase the benefits of its bioactive properties. Structured phospholipids in this study was derived from enzymatic acidolysis synthesis of commercial deoiled soy lecithin and oil enriched omega-3 fatty acids from tuna canning by product, using the R. miehei lipase. Best treatment condition was obtain in 18 hours acidolysis reaction with 30% enzyme concentration, which EPA-DHA incorporation level was 127,47 mg/g and incorporation percentage of EPA-DHA was 51,04% at phospholipids structure. Provision of structured phospholipids had significant effect (α = 0.05) to decrease the levels of liver cell damage due to hepatic steatosis and normalize the albumin level of male Sprague dawley rat which feeds with atherogenic diet. Provision of structured phospholipids had significantly effect (α = 0.05) on the levels of brain DHA incorporation but had no significant effect (α = 0.05) on the percentage of DHA incorporation in brain. Level of DHA incorporation was 224.96 mg/g and the percentage of DHA incorporation was 17.18%. Key word : structured phospholipids, soy lecithin, omega-3, steatosis, brain DHA incorporation
