Teach undergraduate students introduction to Hospitality, Casino Management, Lodging Administration, Cost Control, Regulatory aspects of Hospitality, Club Management, and Responsible Alcohol Service. Provide service to the University and community. Funded Grants 2011-Awarded $54,717 from Nacogdoches Convention and Visitor’s Bureau to conduct basic marketing research in cooperation with Dr. Chay Runnels as Co-PI. 2006-Received $750 grant from Deep East Texas Vocational Preparatory Program to present Career Cluster Knowledge, skills, and abilities for Hospitality Administration careers 2004 - Received $500 mini-grant from Office of Research and Sponsored Programs at SFASU to pursue gambling habits of college students. 2002- Co-PI with Carol Costello on a $45,000 gift from Eagle Distributing to establish an alcohol awareness program at the University of Tennessee. 2001- Received $3000 annual commitment from the Tennessee Tourism Roundtable for the Tourism Institute to conduct the annual certification program, Certified Tennessee Tourism Professional. Total value projected to be $15,000 through renewal. Non-funded Grants March, 2009-Applied for a Harrah’s Research Grant in the amount of $25,000 for investigation related to local food consumption being a competitive advantage for casino restaurants. Co-PI with Carol Costello from the University of Tennessee. October, 2006, requested funding from SFASU Office of Research and Sponsored Programs related to student acceptance of foods with which they are unfamiliar. May, 2001, requested funding from the USDA related to mystery shopping in food service establishments. April, 2001, requested funding from the Robert Wood Johnson Foundation to initiate food safety training for underserved populations. January, 2001, Requested funding from the Ford Foundation related to food safety training for food service personnel in Pacific Rim countries, specifically Thailand. January, 2001, Requested funding from the Pew Charitable Trust related to web based food safety training for hospitality programs at Historic Black Colleges and Universities. The focus on the HBCU’s relates to those programs that do not offer a specific food service sanitation certification program. Requested funding in 11/98 for “Tennessee Salute to Tourism” dinner from the College of Human Ecology. Dinner was to be signature event for hospitality program. Proposal was declined. 6 of 6
