Rather than keeping them all to ourselves we would rather pass on the value to you, our guest, by creating a “ grab bag” called the “Sommeliers Bin” Each wine from the Bin reflects an up to fifty percent reduction from the wine’s former list price. The catch? The wine will remain a “mystery” until presented, and cherry-picking from the Bin is not allowed. If there were any cardinal rules in our “Meats and Potatoes” business, the phrase “Steak goes best with Cabernet” would probably be one of them. This may have been true when our founder, Alan Stillman opened Smith & Wollensky in the 1970’s, when his cellar might be limited by what was available in the market back then. However, much has happened in the world of wine since then. So this begs the question: Is this Steak=Cab rule still the golden rule? In this section named “Meat Market,” our team has hand-picked a short but diverse list of wines outside of the Cabernet domain which are dedicated to the Spanish & Portuguese grape growing regions or are indigenous grapes from those regions grown domestically. One of the cool, rejuvenated and hip growing regions of Spain, Ribeira Sacra literally translates into "Sacred Shore." The vineyards are planted on the steep slopes of the valleys and canyons of the rivers Miño and Sil. These terraces were carved out over 1000 years ago by the Romans to ensure they were supplied with great wine This wine is Certified Organic, and made from 100% Mencia grapes planted throughout five hectares of vineyards overlooking the shore. Made up of 100% Touriga Nacional which was planted in 2001 on Adelaida’s Bobcat Crossing Estate Vineyard. This loamy soil vineyard is one of the few in the entire US to be planted with only Portuguese grape varieties.

Although wine production in Ribera del Duero has historically consisted of simple Garnacha and rosé wines, the region has begun to receive attention. Alejandro Fernandez founded his bodega Pesquera in the early 1970’s and started to make red wines from Tempranillo in a more concentrated, and fruit-driven style. This wine, well-received both in Spain and by many international wine critics, practically put wines of this region on the map.

Classified as an ’A’ grade vineyard property, Quinta do Crasto has been making wine for almost 400 years. Situated on the right bank of the Douro River, between Regua and Pinhao. The vineyards, rise from the banks to an elevation of 2,000 feet, and are planted to about 40 indigenous varieties including Touriga Nacional, Tinta Barroca, Tinto Cao, Tinta Amarela, Tinta Francisca, Sousao, to name a few. This wine is a blend of Touriga Nacional, Touriga Franca, Tinta Roriz and Sousao and aged for 12 months in French oak. A blend of 30% Mencia, 30% Bastardo, 30% Mouraton, & 10% Granacha Tintorera grown in the in the Monterrei DO region located just above the border of Portugal in northwest Spain. This area has a rich geological history which was once prized by the Romans for mining, notably gold. Ancient findings have confirmed that the Romans are responsible for another of the area’s treasures, vineyards tracing winemaking in this area a long as 2000 years ago. One of the oldest established wine-producing regions in the world, the Douro valley is, one of the most distinctive terroirs in the history of world viticulture. Chrysiea which means golden in Portuguese started as a project in the late 1990’s by the world renowned Symington Family, leaders of Port production within the Duoro. This style of wine symbolises the union of a noble Portuguese tradition and an equally rich Bordeaux tradition in the creation of a new and modern style of wine.

Grown in the famous Paderewski Vineyard, with intense soils that bare little resemblance to typical California soils, this vineyard is filled with lean, rocky, and similar to those of Spain which is why Tempranillo, the great grape of Rioja, has found its home away from home in Southern California.
