How Does An Onion Grow?

http://cecalaveras.ucdavis.edu/files/49954.pdf

Onions can be grown in three ways: Bulbs, transplants, or from seeds. It takes two years—usually starting in the spring-- for an onion plant to reach the flowering and seed setting stage.

Bulbing (the portion of the plant either above or below the ground, usually below, producing--as it grows-a stem above, and roots below, as in the onion, tulip, etc) begins when there is 14 hours of light per day. Onions can be harvested early for use as green onions, or they can be left to mature into bigger onions (i.e. like the sliced onions in your hamburger sandwich). Onions are no longer watered when they reach the desired size and the green tops begin to fall over. This is when to harvest them.

The Growth of the Onion is slightly different in New Mexico and the surrounding areas, visit the following link to learn why: http://onion.nmsu.edu/General/Story.html
