Annual Christmas Day dip

Killarney is a town for all seasons. It’s quieter and cosier during the winter, when it can feel like you have the heavenly scenery and attractions all to yourself. You’ll easily see why Killarney won the overall award in this year’s Tidy Town’s Competition.

The Christmas in Killarney festival is returning for 2011. Running from November 19th until January 8th 2012 the line-up of events and activities this year has something to appeal to people of all ages. Now in its seventh year, Christmas in Killarney has become renowned for its fantastic events, its unbeatable festive atmosphere and its unique community spirit, which sees the town come together to put on a world class festival. Whether it’s a romantic meal for two or dinner with the gang, the town and its hotels have something for every appetite. Remembering times gone by... Christmas as a child started with the letter disappearing up a chimney and flying off to a magical world I wanted to live in. It was cold evenings, runny noses, warm fires and friends all wishing for games and guns, not real ones of course and bikes with bells. And then the journey into town for clothes I never wanted, a shirt I‘d never wear again and ice cream in stainless steel bowls that made the day worthwhile. On the way home we’d sit upstairs on the number 16 bus with smoking men and women hiding the excitement of Christmas presents that sat at their feet. And Christmas day , the joy of eating chocolate long before breakfast, leafing through soccer annuals while the dark was still hanging on to the edges of night and my parents groggy eyed and smiling watched us rip through our presents while their steaming mugs of tea made it all a little easier. Christmas dinner, dessert and the Morecambe and Wise Show and then a comfortable tiredness would spread across my body fed by the flames of a fireside and a family so happy. We were protected against the world by the true spirit of love. You have to love Christmas and I still do!

My late mother used to make a simple dish as part of our Christmas dinner which I make now for my family every year when we’re making the Christmas dinner. (And I participate fully with Aileen on a shared basis in making the meal for us, the five children, her parents and any other members of her family who join us). My favourite bit about Christmas will always be the tree. I think I started decorating my mum’s when I was about nine! It became my mission in life. Even after I’d married and moved out I would drive back to her house to climb into the attic and bring down that little silver –fake obviously- beauty. I still have some of her decorations which take pride of place on my own tree now. These days I buy my tree every year from the same man. We only ever see each other once a year. I bring the kids and he comments on how they’ve grown and we discuss this year’s crop of trees. It’s part of the ritual. If he retired I’d be heartbroken!

The Scott family have a very peculiar Christmas tradition. No Christmas dinner would be complete without a small spoon of baked beans on the plate alongside the sprouts, bread sauce, brown meat, white meat, and everything else! As inconceivable as it seems, none of us could imagine having Christmas day dinner without them. They would remain largely untouched for the rest of the year. It all started in the 30’s when granddad came back home from having lived in the States. I think the theory was that baked beans were a new and exciting food in Ireland and seen as the height of sophistication at the time! And so it was a real treat to get a spoonful of them with dinner like a little relish. Our precursor to tomato sauce of sorts. In recent years when my siblings have gotten married and had their first Christmas dinner away from home, there’s always a tiny tin of baked beans stuffed in the suitcase!

Christmas for me was always about visiting both my grannies on Christmas day. We’d start in Drumshanbo after mass with Granny McKenna who was the Post Mistress there since the 60’s. We’d have a breakfast, a few stories (granny would hear all the news in the post office!) and swap presents. Back home for the Christmas dinner and then we’d jump in the car and head for Ballinamore where my Granny Murphy lived. She owned Murphy’s Foodstore in the town. I always remember Christmas at home with the fondest of memories from the wonderful smells that emanated from the kitchen in preparation for Christmas Day, to the great excitement in anticipation of Santa’s visit. For me one of

the most wonderful characters that stands out for me was my wonderful Grandfather - “Pa”, as he was known affectionately to us. The tradition in our house was to find the coins in the Christmas pudding, this was Pa’s contribution to the Christmas dinner. After a wonderful dinner it was pudding time and each child eagerly ate their pudding trying to find the illusive coins, Pa would take out his handkerchief to wipe his mouth and these coins would appear - unbeknown to us that there were no coins in the pudding at all!!!

Christmas has a life of twelve days according to both liturgical and folklore traditions. But in modern times that life has shrunk quite a lot even to the limits of a single day in places. I never accepted the ‘cutbacks’ that brought this about and hence during the season of Nollaig I sometimes retreat towards havens where customs are given due recognition and perhaps some reverence. The Daingean/ Dingle area of Kerry is one such place and a beloved Christmas memory from there concerns St. Stephen’s Day, referred to locally as the ‘Wran’s Day’. World War Two was raging at the time, I may have been ten years of age or thereabouts and it was my first time going ‘in the Wran’. By seven o clock on the morning of December 26 a group of us, all male set out from our village of Dún Síon honouring the age-old tradition. I recall that we all wore long trousers made from flour bags and dyed red for the occasion. With a ‘false-face’ to hide identity and a melodeon player at the front we felt fit to traverse the countryside over the following twelve hours. The spirit of Christmas greeted us at every door; we went inside where music, song,dance and hospitality blended; then it was always on to the next and so on along the foot of lovely hills until daylight faded into darkness as we arrived back in Dún Síon. It truly was Heaven on Earth. Go Maire an sprid go deo.

Micheál Ó Muircheartaigh I was nineteen years of age and working in London and planned everything around a trip home for the holiday. I arrived at Heathrow Airport on Christmas Eve agog with excitement of getting home for the first time in almost a year; my bag was full of presents; and I had a pocket full of party invitations. I was greeted by a destination board replete with cancellations for all flights and the lengthy lines at every airline desk indicated that thousands of people were in the same

predicament as me. We were going nowhere. Amazingly the Aer Lingus staff had some news. If the weather lifted the airline would put on special flights on Christmas Day. After a fretful night on a hard bench, the blearyeyed Irish were greeted by the arrival of Trans-Atlantic jets piloted by volunteer crews to bring us home. Never was the sight of a green-liveried plane with a shamrock on the tail more welcome.

We love, love, love Christmas in our family, and like all families we have our traditions. And now that our parents live abroad when they come home to celebrate Christmas with us it’s even more special. Firstly stockings must be hung up on Christmas Eve, and along with the goodies left by Santa when we get our greedy hands on them on Christmas morning they must also contain a satsuma and some chocolate money covered in shiny gold foil, it’s not a Christmas stocking in the Desmond household without those items! Thankfully Santa never forgets them! After that we head up to UCD to run the GOAL mile. We’ve been doing this for years, my dad’s a great runner and he started us on it, but it doesn’t matter what your fitness level is, my mum has very bad arthritis and she walks it every year, and my brother Conor who is allergic to exercise moans about it for a minute or two but always joins in nonetheless! It’s a great feel good event! After the run we then head to the Forty Foot where my family watch myself and my friends jump into the cold, cold sea. Christmas just isn’t Christmas for me without that dip in the sea! Again it’s all in aid of charity, and it’s great fun, the atmosphere down there is fantastic! Yes it’s chilly but after a quick nip of some hot port from a hip flask all feeling is restored! Then it’s off home for the best part of the day - Christmas dinner! Actually last year my husband Davie cooked for us all, and it was so good it’s now become our new favourite tradition! I just haven’t told him that yet! Preparation: 1. Cut coloured paper into a T shaped tag, making the top part wider. Write your guests name on the top of each tag with gold/silver pen. 2. Cut ribbon to size and wrap around the glass holder. Either tie in a bow or secure with glue. 3. Cut your holly, ivy and Christmas tree tips to size so that they fit into your holders. 4. Arrange name tag, ivy, holly and Christmas tree tip in the glass tumbler. And now you have your own unique place card holders!

Get your skin ready for Christmas The harsh effects of cold and blustery weather, coupled with a lack of vitamin D during the grey winter months can play havoc with your skin. But don’t worry we’ve got some top tips on how you can get it ready in time for the party season. Preparation... Cleanse! Tone! Moisturise! No matter what your age or skin type, your skin can be healthier, look younger and feel smoother if you know how to take care of it. And that comes down to three simple steps: 1.Cleanse 2.Tone 3.Moisturise Before you buy be sure to spend some time examining your skin. Is it dry or oily or a combination of both? Be sure to invest in the right products for your skin type. 1.Cleanse Having a beautifully cleansed face is the first step in the routine – cleansing removes make up, toxins and dirt and helps to open up your pores. Also once a week you should try to use a face mask to draw out the dirt that is deeper down in the skin, and to eliminate dead skin cells.

Always take your make-up off before you go to bed – even if you have been on a Christmas night out! Your skin needs time to breathe and repair and it can’t do that if it has layer of foundation on top of it.

Define them with a chocolate brown or charcoal liner along your upper lashes. Smokey eyes look best in winter. For a sultry effect, you can use eye shadows in cinnamon and coffee shades. Keep your lips moisturised in order to prevent them from becoming cracked and dry. Be sure to apply lip-gloss throughout the day. A light, matt foundation as well as a tinted powder, with a slight shimmer, look great in winter. A sheer layer of creamy blush-on can boost up a subtle daytime look, to bring it through to the evening. False eyelashes are a must for partygoers but be sure to spend some time practising, it takes a while to get used to putting them on. For an extra glam effect try an eye shadow in a bold block colour, with a hint of glitter.

Last Minute Christmas Cake Forgot to make the Christmas cake? Fear not Kevin’s lighter version can be made any time before the big day, just follow his step-by-step instructions. Serves 12 Ingredients: 300g/10oz SuperValu Plain Flour, sieved 1 tsp SuperValu Salt 110g/4oz Candied Orange Peel 225g/8oz SuperValu Currants 225g/8oz SuperValu Sultanas 55g/2oz Glacé Cherries, quartered 85g/3oz SuperValu Goodness Ground Almonds 225g/8oz SuperValu Butter 225g/8oz SuperValu Caster Sugar 5 large SuperValu Eggs 2 tsp Cinnamon 1 tsp SuperValu Ground Ginger 1 SuperValu Lemon, grated zest 1 tsp Bicarbonate of Soda dissolved in 1 tbsp SuperValu Milk 4 tbsp SuperValu Apricot Jam For the almond paste: 75g/2.5oz SuperValu Icing Sugar, sieved 75g/2.5oz SuperValu Caster Sugar 150g/5oz SuperValu Goodness Ground Almonds 2 SuperValu Egg Yolks, beaten ¼ tsp Almond Essence 1 tsp SuperValu Cooks Ingredients Lemon Juice

For the icing: 500g/1lb 2oz SuperValu Icing Sugar 2 SuperValu Egg Whites ½ tsp Glycerine Preparation: 1. Preheat the oven to 150ºC/300ºF/Gas Mark 2. Grease and line an 8 inch round cake tin with greaseproof paper. 2. Place the ground almonds, lemon zest, peel, currants, sultanas, and cherries into a bowl and dust with 1 to 2 tablespoons of the sifted flour, until coated. In a separate bowl cream together the butter and sugar until pale and fluffy. Beat in the eggs one at a time, (if the mixture looks like curdling add in a small amount of the flour), then fold in the sifted flour. Add the fruit mixture, spices and the dissolved bicarbonate of soda. Mix thoroughly. Transfer the mixture to the tin. 3. Bake for 2–2 ½ hours, testing after two hours. If a skewer inserted into the middle comes out clean, the cake is ready. If not, return to the oven. Leave the cake to cool in the tin for approximately 30 minutes then remove from the tin leaving to cool for 2 hours on a wire rack. For the almond paste: Place the icing sugar and caster sugar in a mixing bowl with the ground almonds. Add the egg yolks, almond essence and lemon juice. Knead to make a soft but not sticky dough. Turn onto a surface dusted with icing sugar, and knead until smooth. For the icing: Lightly whisk the egg whites in a large mixing bowl until they are just beginning to get frothy. Stir in a couple of spoons of icing sugar and beat with a wooden spoon until smooth. Gradually add the rest of the sugar, beating well between each addition. Stir in the glycerine which helps prevent the icing setting too hard.

How to: Decorate your Cake

Step 1 Roll out your almond paste. Using a plate (or the base of your baking tin) as a template cut around to get a perfect circle. Turn the cake upside down and brush the base with some apricot jam.

Step 2 Place the large almond paste disc on top of the jam. Next using a palette knife, spread the icing on the almond paste. While the icing is still soft use your knife to create peaks by lifting your knife from the icing in an upward movement.

Preparation: 1. Grease a large swiss roll tray (13inch by 9 inch) very lightly and line it completely with about 2-3 layers of cling film. Place a sheet of baking parchment across the bottom of the tray. 2. Add the butter and cream to a saucepan and allow to come to a rapid boil. Add this to the melted chocolate and whisk rapidly. Then add in the egg yolks, orange zest and Grand Marnier (if using) and whisk thoroughly. 3. Pour into the prepared tray, allow to cool and then refrigerate for 5-6 hours. Leave at room temperature for 30 minutes to soften slightly. 4. Break or cut the chocolate slab into small pieces. Roll the truffles into balls using your chosen coating and serve or refrigerate. These will keep in the fridge for up to 4 weeks. Chocolate Truffles

Serves 4 Ingredients: 150g/5½oz SuperValu Honeydew Melon, chopped 50ml/2fl oz SuperValu Fresh Orange Juice 50ml/2fl oz Grifon Prosecco 100g/3½ Crushed Ice 1 SuperValu Pomegranate 1 SuperValu Fresh Orange, segmented Preparation: 1. To prepare the melon, firstly cut it in half and remove the seeds. Using half the melon cut out the melon balls using a melon ball scoop. If you don’t have a scoop, simply hand cut the melon into bite size pieces. 2. Cut the remaining half of the melon into chunks and place in a food processor to create a puree. 3. Pour some of the puree into the bottom of your serving glass and place 4–5 melon balls on top. Add a segment of orange and some orange juice. Top with crushed ice and add the pomegranate seeds. Pour over the Prosecco and stir with a straw – enjoy moderately!

Smoked Salmon & Filo Parcels Serves 4 Ingredients: 2 fillets of SuperValu Fresh Salmon - diced 8 slices SuperValu Smoked Salmon 1 tbsp SuperValu Fresh Parsley - chopped 4-5 SuperValu Mushrooms - thinly sliced 1 SuperValu Carrot - diced ½ SuperValu Onion – chopped finely 2 Cloves SuperValu Garlic chopped finely 1 Box of Filo Pastry – naturally defrosted (in the fridge is best) 3 tbsp White Wine 50ml/2fl oz SuperValu Cream SuperValu Cooks Ingredients Salt and Pepper 1 tbsp SuperValu Plain Flour 200ml/7fl ozSuperValu Milk 25g/1oz SuperValu Butter Preparation: 1. Heat a large pan with a little butter and add in the onions, carrots, mushrooms and diced garlic. Cook gently until softened. Next add in the plain flour and

allow this to coat all of the vegetables and dry up any liquids in the pan. Pour in the white wine and allow this to bubble up and stir carefully. Pour in the milk and the cream and stir continuously until the liquids have thickened. 2. Add in the diced salmon and allow this to cook very gently until the salmon is lightly poached. The mixture should be quite thick so don’t worry about that. Season lightly with salt and pepper and stir in the chopped parsley. Transfer to a mixing bowl and allow to cool. 3. Preheat the oven to 200ºC/400ºF/Gas Mark 6. Cut the filo pastry into squares approximately 5x5 inches. Brush single layers of filo pastry with melted butter and lay three layers on top of each other - putting each at an angle so that you end up with a star shape. Lay a slice of smoked salmon on top and repeat for the other parcels. Once the salmon mixture is cold divide that between the layers of smoked salmon and filo pastry. 4. Brush the edges with some melted butter and then decoratively secure the parcel into your desired shape and place on a baking tray. I normally gather them together at the top in a parcel shape. Brush with melted butter and place on a flat baking tray. Bake for 15-20 minutes until the pastry is crisp and golden brown. Serve immediately with a side salad.

Salmon Rillette (Serves 4) - Ingredients: 25g/1oz Unsalted Butter 1 SuperValu Shallot, finely chopped 200g/8oz SuperValu Smoked Salmon, diced 100g/3½ oz cold Baked SuperValu Fresh Salmon- finely chopped 100g/3½ oz Crème Fraiche or Cream Cheese 1 tbsp SuperValu Chives, finely chopped 1 ½ tbsp SuperValu Lemon Juice SuperValu Cooks Ingredients Black Pepper, freshly ground Preparation: 1. Melt the butter in a small pan over a medium heat. Add the shallot and allow to cook for 2–3 minutes until translucent. Allow to cool slightly. 2. Pour the butter and shallot mixture into a food processor and add the smoked and baked salmon, pulse lightly until the fish is coarsely chopped (do not overblend or it will become paté-like). 3. Using a spatula, remove the salmon mixture from the food processor into a large bowl and add the crème fraiche, chives and lemon juice. Season with pepper and serve. Firstly wash your mussels in some fresh cold water, de-beard and remove any debris. Do not use any mussels that do not close when gently tapped. 2. Drizzle some olive oil into a large pan and add the onion and garlic. Allow to cook for 2–3 minutes then add the cleaned mussels and a splash of white wine to introduce vapour to steam and cook the mussels. Lamb’s Liver Parfait Serves 4-6 Ingredients: 400g/14oz Lambs Liver, thinly sliced and cut into strips 1 small SuperValu Onion, finely chopped 2 tbsp SuperValu Chives, snipped 50g/2oz SuperValu Plain Flour 2 tbsp SuperValu Olive Oil 350g/12oz butter (at room temperature) 6 tbsp Brandy, plus a little extra if necessary 100g/4oz Clarified Butter 8 tbsp Pear & Apricot Chutney (see recipe on page 39) 1 SuperValu Baguette), very thinly sliced and toasted SuperValu Cooks Ingredients Salt and Black pepper – freshly ground Preparation: 1. Heat a large frying pan until searing hot. Place the lambs liver in a bowl with the

onion and chives. Sprinkle over the flour and season to taste, then mix until well combined. Add the olive oil and a knob of butter to the pan and tip in the lambs liver mixture. Sauté for 4-5 minutes until the lambs liver is well sealed and lightly browned all over. 2. Pour the brandy over the lambs liver mixture and set alight, then use to deglaze the bottom of the pan by scraping off any sediment with a wooden spoon. Transfer to a food processor and add the remaining butter, then blitz until smooth. Season to taste and add another dash of brandy if you think it needs it. 3. Pour the pate into a 900ml/1½ pint jar or individual ramekin dishes, tapping gently on the work surface to ensure that it settles evenly and to remove any tiny air bubbles. Leave to cool completely and then pour over the clarified butter to seal completely. Chill for at least 4 hours or overnight is best. 4. Serve with the pear and apricot chutney and toasted French bread. To make Clarified Butter – To separate the milk fat from the butter heat gently and using a spoon remove the top layer ensuring the bottom layer is not disturbed. Looks like oil when removed.

Kevin’s Christmas Turkey Serves 8-10 Ingredients: Turkey 6.5kg/14lb SuperValu Quality Irish Whole Turkey 90g/3oz SuperValu Butter 4 leaves of SuperValu Fresh Sage, finely chopped 7-8 SuperValu Streaky Rashers Stuffing: 150g/5oz SuperValu Butter 1 medium sized SuperValu Onion 225g/8oz SuperValu Sausagemeat 4 tbsp SuperValu Fresh Mixed Herbs, finely chopped 75g/3oz SuperValu Goodness Nuts ½ tsp Cinnamon Preparation: 1. Preheat the oven to 200ºC/400ºF/ Gas Mark 6. 2. Melt the butter over a very gentle heat. 3. Finely chop the onion and add to the butter and cook until very gently cooked but not coloured. Take off the heat, allow to cool slightly and then add the sausage meat, freshly chopped herbs and the breadcrumbs. The mixture should not be too dry as it will lead to a dry stuffing. 4. Season the stuffing, add the pine nuts and ground cinnamon and allow the stuffing to cool completely. The stuffing can be made a couple of days in advance if you wish. 5. Mix the 90g of butter with the finely chopped sage. Loosen the skin away from the breast of the turkey and rub the sage butter onto the breast under the skin. On Christmas morning stuff the turkey. Line the cavity with some baking parchment and loosely pack the stuffing into the bird. Don’t forget to weigh the turkey again with the stuffing enclosed (to assist with accurate calculations for cooking times etc). 6. Put the turkey onto a large roasting tray and lay the streaky rashers of bacon across the breast to protect the meat and prevent it from drying out. 7. Put the turkey into the oven. After the first

two hours cover with tin foil to prevent excessive browning. 8. Allocate 20 minutes per pound and then an additional 20–30 minutes in the oven. In total it should take about 4½ hours. When a skewer is inserted into the meat nearest the bone (ie the leg) the juices should run completely clear. 9. Allow the turkey to rest for at least 20 minutes when it comes out of the oven before carving.

Add in the sugar and the cranberries and continue to cook until the sugar is dissolved and the cranberries are just starting to pop. Remove the turkey from the roasting tin and using a spoon remove the clear liquid (fat) from the juices in the pan. 2. Place the roasting tin on the stove top on a high heat and add the flour. Transfer the gravy to a saucepan and boil for approximately 10 minutes, remove the pan from the heat and add the butter. Stir for a minute or two until you have achieved a nice glossy gravy.

Place all the ingredients into a saucepan and allow to come to the boil. Reduce the heat and allow the cranberries to cook down gently. This will take about 10–15 minutes on a very low heat. 2. Transfer to an airtight container and keep refrigerated for upto two weeks. If you wish you can store the relish in a jar with the cinnamon stick still intact. Top tip: This is also delicious on St. Stephen’s Day mixed into some yogurt and served with toasted granola as a mid morning snack.

Combine all the ingredients (except the pears) in a large thick bottomed pan. Simmer uncovered for approximately 35–45 minutes and then add in the diced pears. Stir and continue to simmer until the pears are gently cooked and the consistency is thick and chunky. Remember to stir often to prevent it from sticking to the base of the pan. (If the mix gets burnt/caramelised slightly at the bottom, transfer to another pan to continue cooking and discard the spoiled chutney. Do not mix burned chutney into the rest of it.) Do not allow the chutney to boil as this will cause it to caramelise and discolour. 2. Transfer to clean sterilised jars and cover immediately. This recipe makes three 350g jars or two 500g jars. Make up to 3 months in advance and store in a cool dry place. Once opened keep refrigerated.

I love the ham at Christmas and could happily content myself just slicing chunk after chunk whilst waiting for dinner to be ready. Serves 8 Ingredients: SuperValu Quality Irish Ham Fillet 3-4kg 5–6 dstspn SuperValu Marmalade 75g/3oz SuperValu Dark Brown Sugar Half a jar of SuperValu Cooks Ingredients Cloves Preparation: Soak the ham for up to an hour. Put into a pot, cover with water and bring to the boil. Allow to simmer for about 2 hours and turn off heat, allowing meat to cool in the cooking liquid

Step 1 Remove the ham and using the tip of your knife, score lines across the fat to create a diamond shaped pattern.

Step 2 Stud the cloves into the scored fat between each diamond. Place the ham onto a baking tray.

Roast Herb Stuffed Leg Of Lamb Serves 6-9 Ingredients: SuperValu Quality Irish Leg of Lamb, boned with shank end left intact - from the Butcher Counter 50g/2oz SuperValu Butter 1 large SuperValu Onion, finely chopped 2 SuperValu Garlic Cloves, crushed 1 tbsp Fresh SuperValu Thyme, chopped 4 tbsp SuperValu Fresh Flat-Leaf Parsley, chopped 175g/6oz Fresh White Breadcrumbs 50g/2oz SuperValu Fresh Rosemary, Thyme and Sage branches 1 tbsp SuperValu Plain Flour 300ml/1/2 pint Lamb or Chicken stock 1 tbsp Redcurrant Jelly SuperValu Cooks’ Ingredients Salt and freshly ground Black Pepper Preparation: 1. Preheat the oven to 190ºC/375ºF/Gas 5. To make the stuffing, melt the butter in a large frying pan and sauté the onion for 3-4 minutes until softened but not coloured. Add the garlic and cook for another minute or so, stirring. Stir in the thyme, parsley and breadcrumbs and season to taste. Allow the stuffing to cool down at this stage. Press the stuffing into the tunnel of the lamb leg and season the joint all over. Arrange the herb branches around the outside of the lamb and tie to secure with string. 2. Place the lamb joint in a roasting tin, cover loosely with foil and roast for 2 hours, then remove the foil and baste well. Roast for another 30 minutes until just tender. If you like your lamb more well done, give it another 30 minutes cooking time. To check that it is cooked to your liking, insert a skewer into the thickest part of the meat and then watch the juice run out – the pinker the juice, the rarer the meat. When it is cooked to your liking, transfer to a carving platter and leave to rest in a warm plate for 30 minutes. 3. To make the gravy, place the roasting tin directly on the hob and stir in the flour. Cook for 1 minute, stirring continuously, then gradually add the stock, whisking until smooth after each addition and scraping the bottom of the tin to remove any sediment. Transfer the gravy to a small pan and whisk in the redcurrant jelly, then simmer gently until you have achieved the desired consistency. 4. When the lamb is rested, carefully cut away the herb branches and string and then carve into slices, holding the shank end of the bone.

Step 1 Preheat the oven to 190ºC/375ºF/Gas Mark 5. Wash the salmon under cold running water and pat dry with kitchen paper. Insert the sliced onion, half the sliced lemons, bay leaves and tarragon into the cavity.

Step 2 Place the salmon on a large baking tray and drizzle with olive oil. Pour the white wine and lemon juice over the salmon and season with salt and pepper.

Step 3 Cover with foil to create a loose seal and bake in the oven for 1¼ hours. Once cooked remove from the oven and allow to stand for 15-20 minutes. The skin can be removed quiet easily using a spoon if you wish. Dress with the remaining sliced lemon. Serve with baby potatoes and be vigilant for any stray bones.

Profiteroles Makes Approx 36 Ingredients: Profiteroles 125ml/4fl oz SuperValu Milk 125ml/4fl oz Water 1 tsp SuperValu Salt 15g/½oz SuperValu Sugar 112g/3¾ oz SuperValu Butter 275g/9½ oz SuperValu Flour 4 to 5 SuperValu Eggs 1ltr SuperValu Cream - whipped Ginger Biscuits - see page 66

Preparation: 1. Preheat the oven to 180ºC/350ºF/Gas Mark 4. Sift the flour into a large bowl. Pour the water and milk into a saucepan and add the butter. Bring to the boil, remove from the heat and immediately add the flour. Place the saucepan over a low heat and stir vigorously with a wooden spoon until the mixture leaves the side of the saucepan and forms a smooth ball (approximately 5 minutes). 2. Allow the mixture to cool slightly then add the eggs one at a time beating thoroughly after each addition, until the mixture is

smooth and glossy. Allow to cool. Fill a piping bag with a large nozzle with the cooled mixture and pipe walnut sized pieces onto parchment lined baking trays. 3. Bake in the oven for 30–45mins (profiteroles are cooked when they are golden brown and have no moisture in them). Place a hole in each profiterole using a skewer (to release steam) and scoop out any moist mixture or your profiteroles will collapse, you’ll use this hole to pipe the cream in once the profiteroles are completely cooled. Cool on a wire rack.

Profiterole Tree What you need: 36 Profiteroles, Biscuits (for decoration), Melted Chocolate, Piping Bag, Cream, Serving Plate

Step 1 Fill a piping bag with whipped cream and pipe cream into your profiteroles. To melt the chocolate: Place the chocolate in a bowl over a pan of simmering hot water. Once melted remove the pan from the heat but allow the bowl to remain over the hot water as the chocolate needs to be melted as you build your tree.

Step 2 Dip each profiterole into melted chocolate and begin building your ‘tree’ on your serving plate, starting by building your base and working up from there. If your kitchen is warm, you may find it helpful to place in the fridge at regular intervals to help each layer set.

Step 3 Finish by pouring over the melted chocolate. Decorate with simple star shaped biscuits for a truly impressive dessert.

Bailey’s Cream Pots Serves 4 Ingredients: 300ml/½ pint SuperValu Cream 4 tbsp Bailey’s Irish Cream 50ml/2fl oz Freshly Brewed Espresso, cooled (1 shot) 250g/9oz Mascarpone Cheese 2 tbsp sifted SuperValu Icing Sugar, plus extra for dusting Cocoa powder, for dusting 4x200ml/7fl oz ramekins or cups Preparation: 1. Whip the cream in a bowl until soft peaks have formed. 2. Place the Bailey’s in a bowl with the espresso, mascarpone and icing sugar. Beat lightly until well combined, then fold

Preparation: Pannacotta 1. Soak the leaves of gelatine in cold water ensuring that they are fully immersed. 2. Place the cream, sugar and vanilla pod into a large saucepan and bring slowly to the boil. Take the boiling cream mixture off the heat. Remove the vanilla from the cream. 3. Using a sieve, strain the water off the gelatine. Give it a good shake to get rid of excess water and add it to the boiling cream mixture. Whisk continuously to ensure that the gelatine has broken down fully and is incorporated into the mixture. 4. Divide the mixture between 6 ramekins (no need to fill them up fully as the mixture can be quite rich) and transfer to the fridge to set for 5-6 hours or overnight. Cranberry Compote: In a small saucepan, add all the ingredients together and cook on a low to medium heat for 5 minutes or until the cranberries have softened. Set aside to cool. To serve, pour the compote over the Pannacotta.

Peach Melba Serves 6 Ingredients: 100g/4oz frozen Raspberries, defrosted 45g/2oz SuperValu Icing Sugar 1 SuperValu Lemon, zest and juice 2 x 411g tins of SuperValu Peach slices

1 SuperValu Cooks Ingredients Vanilla Pod, split 1 ltr/1¾ pints SuperValu Vanilla Ice Cream 200ml/7fl oz SuperValu Cream - whipped Preparation: 1. Place the icing sugar, lemon juice, lemon zest and raspberries into a food processor and process until smooth, strain the puree through a sieve into a bowl and set aside. 2. Meanwhile remove the peaches carefully from the tin and place in the bottom of a deep dish or bowl. Next add a scoop of ice-cream and drizzle some raspberry coulis on top. Add another layer of peaches and top with some lightly whipped cream. Use the vanilla pod to garnish.

Top Tip: This is a delicious dessert any time of the year, you can use fresh peaches when available, simply poach lightly in some water, sugar and a drop of orange juice for approximately 20 minutes until softened then discard the skin and stone before use.

Party Cocktail Sausages Ingredients: 450g/1lb SuperValu Cocktail Sausages, separated 30ml/1fl oz Worcestershire Sauce 1 tbsp SuperValu Honey 1 tbsp SuperValu Olive Oil Preparation: 1. Heat the oil in a pan and add the cocktail sausages, cook for 2–3 minutes on each side until they are fully browned and cooked through. 2. Once cooked remove the sausages from the pan and place on some kitchen paper to remove excess oil. Place the sausages in a large bowl and pour over the honey, coating the sausages, add the Worcestershire sauce and parsley. 3. Serve immediately on forks or cocktail sticks. Top Tip: As an alternative dip, try some mustard mayonnaise. Place 4 tbsp mayonnaise in a bowl with 2 tbsp wholegrain mustard, juice of ½ lime and salt and pepper, mix well until combined. Place in small bowls to serve.

Red Onion & Goats Cheese Tartlets Serves 12 Ingredients: Red Onion Marmalade 4 Medium SuperValu Red Onions, peeled and thinly sliced 150g/5oz SuperValu Dark Drown Sugar 3 tbsp Red Wine 3 tbsp SuperValu Cooks Ingredients Red Wine Vinegar 1 tsp SuperValu Olive Oil Tartlets: 1 packet of Puff Pastry-thawed naturally 1 quantity of Red Onion Marmalade (above) 150g/5oz SuperValu Goat’s Cheese SuperValu Sun Dried Tomatoes/SuperValu Cherry Tomatoes (12) Preparation: Red Onion Marmalade 1. In a large pot place the onions and the oil over a high heat. Continue to stir the contents to move the onions around and prevent them from sticking. As the onions begin to color and soften (after about 3 minutes) add in the dark brown sugar and continue to stir. The sugar will begin to soften and will coat all of the onions.

Red Onion & Goats Cheese Tarts

Allow the softened sugar to come to the boil gently. 2. Next add in the red wine and the red wine vinegar. Allow the mixture to come to the boil and then simmer for about 15 minutes or until all of the liquid has evaporated off. Make sure that you stir it occasionally to prevent anything sticking to the base of the pot. Transfer to clean sterilized jars and store in the fridge for up to 4 weeks. Tartlets 3. Preheat the oven to 190ºC/375ºF/Gas Mark 5. Roll out some of the puff pastry and cut out large discs with a biscuit cutter. Grease a 12-cup muffin tray and secure a disc of puff pastry in each cup. Place a sundried tomato in the bottom of each. Spoon in a little of the red onion marmalade-about one teaspoon full in each-not too much because it tends to leak. Place one thin slice of the goat’s cheese on top and season with a little black pepper. 4. Bake for 15-18 minutes or until the pastry is golden brown and the cheese and onion mixture is bubbling. Remove from the tin with a palette knife immediately.

Mini Raspberry Tartlets

Mini Raspberry Tartlets Makes Approx 22 Ingredients: 300g/10oz SuperValu Plain Flour 45g/1½oz SuperValu Icing Sugar 150g/5oz SuperValu Butter 1 SuperValu Egg, yolk only 2 tbsp Water 90g/3oz SuperValu Raspberry Jam 50g/1¾ oz fresh or frozen SuperValu Raspberries defrosted 1 tbsp SuperValu Caster Sugar Preparation: 1. Preheat the oven to 180ºC/350ºF/Gas Mark 4. Place the flour, icing sugar and butter in a bowl and combine together until it resembles fine bread crumbs. Add the egg yolk and process until dough just comes together. Turn the dough onto a lightly floured surface and knead until smooth. Wrap in cling film and place in the fridge until ready to use. 2. In a small saucepan heat the jam over a medium heat until dissolved. Add in the whole raspberries and stir until the raspberries are slightly broken down. 3. Roll out the pastry until 3mm thick. Use a 6.5cm diameter round pastry cutter to cut 22 discs from the pastry. Line the muffin tray with the pastry discs and prick the base with a fork. Roll out the remaining pastry and using a 5cm diameter starshaped cutter to cut 22 stars. 4. Spoon jam mixture among pastry cases. Top with stars and sprinkle with caster sugar. Bake for 20-25 mins or until golden. Allow to cool. Dust with icing sugar to serve.

Mini Meringues Makes Approx 28 Ingredients: 3 SuperValu Eggs, whites only 175g/6oz SuperValu Caster Sugar ½ tsp Corn flour ½ tsp SuperValu Cooks Ingredients White Wine Vinegar Preparation: 1. Preheat oven to 120ºC/240ºF/Gas Mark ½. Put the egg whites into a spotlessly clean bowl and beat on full speed until quite stiffly beaten. Turn the speed of the mixer down and slowly add the sugar – one spoonful at a time. When all the sugar has been incorporated, add the corn flour and vinegar and give one final whisk on high speed. When ready the mixture should be glossy and when the bowl is turned upside down the mixture should remain stationary in the bowl. 2. Line an oblong baking tray (13 x 9 inches) with parchment paper. Using a piping bag, pipe the mini meringues to the size of a large walnut. 3. Bake in the oven for 40-50 minutes until the meringue mixture is very firm to touch but still soft on the middle. I normally leave mine to cool in the oven with the door ajar. Keep in a tight container until needed. Serve either alone or with some whipped cream and/or fresh fruits.

Turkey & Ham Pasties Serves 4 Ingredients: 35g/1½oz SuperValu Plain Flour 250ml/9floz Chicken Stock 60ml/2floz White Wine 125ml/5floz SuperValu Fresh Cream 300g/10oz Chopped Cooked Turkey 90g/3oz Chopped Cooked Ham 1 SuperValu Egg Yolk, beaten 25g/1oz SuperValu Butter 25g/1oz SuperValu Mushrooms 2 tbsp SuperValu Fresh Parsley - Chopped 2 tbsp Chives 375g Frozen Puff Pastry, thawed Preparation: 1. Preheat the oven to 180ºC/350ºF/Gas Mark 4. Melt the butter in a saucepan over a low heat. Add the flour to the melted butter and cook for approximately 2 minutes, stirring constantly. Pour in the chicken stock and white wine and cook for a further two minutes. Add the cream and bring the mixture to the boil until thickened. 2. Next add in the chopped turkey and ham and combine into the sauce, then stir in the mushrooms, parsley and chives. Remove from the heat and allow to cool completely. 3. Meanwhile roll out the pastry on a lightly floured surface to form a large rectangle. Cut in length halfways to give to wide pieces. Place one pastry sheet on the lined baking tray and place a couple of large spoonfuls of the cooled turkey and ham mixture in the centre. Cover the potatoes with cold water in a pan and bring to the boil, then simmer for 15-20 minutes or until completely tender when pierced with the tip of a sharp knife. Strain the potatoes and add the butter and milk, mash well to ensure there are no lumps. 2. Add the sprouts to the mashed potato and add the flour and seasoning, pour in the beaten egg. Using your hands combine all the ingredients together and turn out on to a lightly floured surface. Use a rolling pin to flatten the mixture and take a scone cutter or ramekin to cut the mixture. Set aside. • Freeze individual portions so that the thawing and cooking process is easier, quicker and more convenient. • Label packages with the name of the items as well as the date of preparation and storage. 5 Bernard Manning the comedian once quipped I bought my kids a set of batteries for Christmas with a note on it saying “toys not included” …While we still need our sense of humour, these are challenging economic times and especially at Christmas time, where every cent counts. Planning is everything. Christmas spending is usually never budgeted for and so the credit card or short term loan invariably comes to the rescue. Please be sensible this Christmas and plan what you are going to spend and importantly, where the money is coming from to fund that spend. So here are a few tips...

Make a list and after setting a spending limit, work out the cost of • Presents - covering family, friends and bursaries – binmen, postmen, your work colleagues etc • Additional Christmas costs - cards, decorations, tree/s, holly and wreaths • Food and drink for the festive period - checkout what’s on offer in-store • Entertainment - Funderland, cinema, pantomime, zoo etc. You know you are not going to sit in front of the television for the entire 12 day season and any excursions outside the home usually means spending money…so budget for this

Total all these costs - you are going to have to pay for them through either your own savings, an overdraft, loan or a credit card. The ideal of course is to fund from your savings and in particular where you have actually earmarked the current year’s savings for this precise purpose – the Christmas spend. If you have to borrow, try and ensure these borrowings whether a loan or credit card debt are repaid before next Christmas. Savings - the best course to take for your Christmas costs is to start saving the previous January – a Regular Saver or Stamp Saving Scheme – and put what you can afford away each month on a regular basis for 11 months – standing order or direct debit. This should be part of your monthly budget plan. Therefore the total amount of your Christmas bill should be divided by 11 to ascertain what that monthly saving amount should be. If you have not saved, you will need to borrow for the coming Christmas - but you then should plan to save DOUBLE from next January so as to pay for both this Christmas and the next. Borrowing - interest rates from your local credit union or your own bank tend to be among the cheapest options when it comes to short term finance. Avoid moneylenders at all costs. Overdraft. If you have to use an overdraft, ensure you do not exceed the limit and if you must, always call your bank branch and look for that permission for the increase. Credit card rates vary from 9.11% to 24%+ and virtually ALL the credit card companies charge well over 20% when you withdraw cash on a credit card from the date of withdrawal. However, there are a number of companies who offer 0% interest rate on transferring balances from another credit card company for up to 10 months. You might consider this in January if your credit record is good and you have a plan to reduce or pay off entirely within a certain time frame.

The Christmas aftermath - even the piper has to be paid and putting your head in the sand when the bills finally come through the door in January is not going to solve your problems if you have been a little heavy on the spending sauce. If you are in a hole, the first thing you have to do is stop digging. Communication is key and if you simply cannot afford the required repayments, negotiate and pay what you can afford. You will need a plan of when the debt will be regularised. Theoretically, you shouldn’t spend what you don’t have BUT we are all human and sometimes sense goes out the window. Perhaps that should be cents. Obtain professional help if you have to but do not ignore. Finally, don’t forget, Christmas comes around every year, so plan to save in January for next Christmas!

★ 100g/3½ oz SuperValu Cranberries ★ 75ml/3½ floz SuperValu Oil Icing ★ 300g/10oz SuperValu Icing Sugar ★ 1 SuperValu Lemon – juiced

Preparation: 1. Preheat the oven to 180ºC/350ºF/Gas Mark 4. Place the muffin papers into the muffin tin. 2. In a large bowl sift the flour, baking powder and spices. Chop 100g of the white chocolate into small chunks and add to the bowl. In a second bowl beat the egg and add the sugar, oil and milk - mix well. Pour the egg mixture into the flour mixture and add the cranberries, combine until a smooth dough has been formed but be careful not to overmix or the muffins will end up gooey. Pour into the muffin papers and bake for 20-25 minutes. 3. Once the muffins have cooked remove them from the oven and place on a wire rack to cool. Once cooled prepare for decoration. 3. Sieve the icing sugar into a bowl and add the lemon juice, one spoonful at a time until slightly runny in consistency. Pour over the muffins to create a snow capped effect.

When you are ready to make the decorations take out the pastry and leave it for 10-15 minutes to come back to room temperature. 4. Lightly dust a work surface with flour. Roll out the pastry to a thickness of approximately ¼ inch. Cut out shapes using assorted Christmas cutters and place onto a greased baking tray. With a skewer, make a hole in the top of each shape. Bake for 8-10 minutes. 5. Decorate with royal icing and thread through ribbon to hang on the Christmas tree. Decorate with tiny sweets, sugar strands and chocolate drops. Gingerbread Tree Decoration

If you need to carry something yourself, you should hold it close to your chest and bend your knees instead of your back when lifting it up. It’s very easy to hurt your back, so take extra care of it when preparing for Christmas.

Early Christmas Shopping If you’re expecting, try to start your Christmas shopping early. Getting stuck in a panic just before Christmas can be extremely wearing and certainly not good for mother or baby. Prepare a shopping list and hit the shops weeks before the big day. Ask a friend or family member to help you if possible. With some time to spare, Christmas shopping can actually be enjoyable. Another option to keep in mind is to shop online and have your shopping delivered straight to your front door.

Dreaming of a white Christmas? You can’t beat a bit of snow on the ground to boost the festive feeling. But as we learned last winter, a big freeze around Christmas time can have a downside as well. Weather forecasters are predicting a cold snap similar to last year, so here are some steps to make sure you get the most from the festive season. • Don’t wait for winter to set in before you stock up on the essentials. Start with a shovel. A lot of people were trapped in their drives last year when the snow froze over. It can be tough work in the cold weather, but take a sturdy shovel to the snow before it freezes over and dig a path out to the road. While you’re at it, why not clear the footpath outside your house to make sure your neighbours can get by? If everybody on the road does this, life will be much easier.
