Tea Description Assam – This malty, brisk, and bold black tea pairs well with Brie as it’s strong characteristics compliment the creamy and rich cheese. Darjeeling – This black tea from north east India is known for it’s muscatel characteristic, which denotes its musky and spicy finish. This tea will mirror the Stilton it is paired with because it compliments the sharpness of this cheese. Nilgiri – This aromatic and fragrant black tea from south India will contrast its dry and strong flavor characteristics to ensure a very enjoyable pairing. Silver Needle – This extremely subtle tea has delicate honey notes, floral aromas, and mild sweetness, which complements fresh fruit very well. Lapsang Souchong – This smoked black tea from China goes perfectly with the selection of smoked meats we have chosen to pair with it. Masala Chai – This traditional Indian spiced tea combines nicely with cream due to its ability to take dairy well. The spices - cinnamon, cardamom, ginger, and pepper are a great mix with the curried pork. Cinnamon Black Tea – This spiced black tea blend combines well with apple juice, as it is cold infused for 24 hours before it is made into a chutney. Matcha – This is a Japanese tea made by stone grinding shade grown tea from Gyokuro. It boasts some of the highest amounts of polyphenols and is very good for you due to the fact you are ingesting the actual leaf. The mixture into a cooked cream gives this desert a nice colour and compliments the dairy base due to the initial contrast. Earl Grey – This black tea base flavoured with oil of bergamot is infused in our premium vodka for 20 hours to make a delicious cocktail to be served neat, on the rocks, or with orange juice. Cranberry Tisane – This herbal tea consists of dried cranberry and is steeped and mixed with orange juice and vodka to make a Martini perfect for the holidays. Orange Pekoe – Our Orange Pekoe blend consisting of Kenyan and Indian teas is steeped and mixed with Gin instead of tonic to put a twist on a very traditional cocktail. It is garnished with lemon to ensure a nice finish.
