4 cloves garlic, minced 1 medium-large carrot, minced ½ tsp ground cumin – or more to taste if needed 1 tsp ground coriander – or more to taste if needed 1 heaping tsp garlic powder 1 tsp onion powder Chipotle powder – to taste ¼ bunch of Italian parsley, washed, stems removed, finely chopped 2-3 cups panko (GF Substitute: grind Erewhon gluten-free rice crispies into crumbs) 2 eggs, whisked 1 ½ tbsps balsamic vinegar Salt and pepper to taste In a small sauté pan over medium heat, heat about 1 tbsp olive oil and sauté shallots until translucent. Next add the mushrooms, garlic, carrots and sauté for 10 to 15 minutes, until most of the liquid from mushrooms has evaporated and the carrots are tender. Remove from heat and put the mixture into a large bowl. Let cool. Stir in parsley, panko, spices, egg, balsamic vinegar, salt and pepper to taste. The mixture should be thick and hold together. Shape mushroom mixture into 6 – 8 medium size burgers. Heat 2 – 4 tbsps oil in a large sauté pan over medium high heat and sear until golden on both sides and cooked through. Remove each burger to a bun and serve with a traditional garnish of sliced onion and tomato. If you like, put a slice of your favorite cheese on the mushroom burger to make a mushroom cheeseburger.

TEMPEH MOWENNA 1 pkg Tempeh cut into 8 rectangles or triangles 1 qt organic sunflower oil for deep-frying 3 – 4 cloves garlic, minced 1 tbsp fresh grated ginger ½ cup Shoyu ½ cup Balsamic Vinegar ½ cup Rice Syrup ½ cup water Cut the tempeh into large pieces. I like triangles since it is a shape not used too often in cooking and tempeh is well suited to be cut into that shape. Heat oil in a pot for deep-frying to 350º. Put pieces of tempeh into the oil and fry until golden brown. Remove the tempeh from the oil and drain on a cooling rack placed on a cookie sheet. To prepare sauce, mix together all ingredients. Adjust seasonings to your liking. The flavors should be on the strong side. While the tempeh is frying prepare the sauce and put it into a skillet. Bring to a simmer and add the cooked tempeh. Let the tempeh continue to cook on a medium heat with the lid off until all the sauce is gone. Turn the tempeh regularly while cooking so it becomes evenly seasoned. Eat as is or with a mustard dip sauce (mustard, shoyu, agave syrup and water) or make big slabs and put into a sandwich. It’s also great mixed with caramelized onions and sauerkraut.

WHITE BEAN AND GREENS SOUP ½ cup dry white beans, or 1 can organic white beans 1 clove garlic, minced 1 large onion diced 1 sprig fresh rosemary ½ leek sliced in half lengthwise, then ¼” pieces 1 tsp Herbs de Provence (optional) 1 bunch spinach, coarsely chopped White or chickpea miso (to taste) 1” piece of Kombu Olive oil 1 bay leaf Dash of balsamic vinegar Cooking Dried Beans: First clean the beans well by sorting through them to look for stones and then wash them well. Soak them overnight or use the quick soak method. For quick soaking bring 2 cups water to a boil and pour over the beans in a glass or ceramic bowl. Cover and let sit for 2 -3 hours. After the beans have soaked, pour the soaking water off. Put the beans into a pressure cooker with the Kombu, bay leaf and 1 ½ cups water. Bring to pressure and cook for 20-30 minutes after the pot comes to full pressure. Turn the heat off and allow the pressure come down slowly. Test the beans to make sure they are soft all the way through. If they are not just simmer a little longer until they are tender. If you don’t have a pressure cooker, put the beans into a pot with enough water to cover by 3 inches. Add the Kombu and bay leaf and bring to a boil. Simmer until they are done – anywhere from 30 minutes to an hour and a half, depending on the bean. While the beans are cooking, in a stockpot heat a small amount of oil. Sauté onions and leeks until they are soft and tender. You can add a little sea salt at this time to bring out the liquid in the onions. Cook until the onions become translucent, rich and creamy. The longer they cook the sweeter the soup will be. Then add the minced garlic and sauté for another two minutes or so. When the onions and leeks have cooked enough, cover with water by at least 2” and add a sprig of fresh rosemary along with Herbs de Provence. Simmer with the herbs until the beans are finished cooking in the pressure cooker. If you don’t have fresh rosemary, crush and add dried rosemary to the soup at anytime. Add the beans and greens to the cooking onions and leeks. Remove the rosemary sprig from the stock and season with sea salt and 2-4 tbsp of white or chickpea miso and a dash of balsamic vinegar for added flavor. Just remember miso is salty, so limit the amount of sea salt you will be using. If your soup is too thick add a bit of water or vegetable stock. Play with the amounts and types of seasonings to get variations on the flavors and make your own version. I like fresh grated ginger along with cilantro. This soup is also great with a bit of pasta or cooked rice to make it heartier.

New Treatment Considerations for

Children with T HE NATIONAL INSTITUTE OF MENTAL HEALTH ESTIMATES THAT ABOUT 2 MILLION CHILDREN

are diagnosed with Attention Deficit Hyperactivity Disorder (ADHD) and the condition is 5 times more prevalent in boys than in girls. The last decade has seen a steady rise in the prevalence of ADHD and with that, the number of children being prescribed medications to treat the condition. Characterized by lack of focus, hyperactivity, and other behavioral concerns, it is believed that ADHD is caused by imbalances in brain function. The brain uses a mixture of chemical messengers, called neurotransmitters, to control behaviors such as attentiveness, focus, and concentration. In some children the neurotransmitter chemical messages can go haywire leading to the symptoms that define ADHD. Because the brain uses multiple different messengers to control behaviors, there may be multiple imbalances that ultimately lead to an ADHD diagnosis. The key to successful treatment of ADHD is to recognize which imbalances are present and then target them therapeutically.

Stimulant medications such as Ritalin and Adderall can be quite effective at controlling the symptoms of ADHD but they aren’t for everybody. These medications only focus on one or two specific chemical messengers and may overlook other important imbalances. Secondly, these medications don’t get down to the “root cause” of the problems. Most ADHD medications work by “reshuffling” chemical messengers. If the root cause of a behavioral symptom is a true deficiency of a chemical messenger, medications may not be sufficient because they do not add more neurotransmitters to the system. When it comes to treating disorders of the brain, which include depression, anxiety, insomnia, and ADHD, doctors have historically been limited in the tools available to test and treat these conditions. Due to practical considerations, we cannot simply 60

open up one’s brain to look at what imbalances are causing problems. As a result, we have to rely upon questionnaires, self-reports from the patients and our own observations regarding what their issues are in order to properly diagnose a condition and then choose an appropriate form of treatment. Ultimately, improving treatment for ADHD requires a greater understanding of the brain and an improved set of tools for addressing the condition. Thankfully, medical laboratory science has advanced to the point where we can now perform non-invasive lab tests that can measure neurotransmitter levels. These lab tests identify which neurotransmitters are imbalanced and how severe those imbalances may be. With this useful lab data, more focused treatment decisions can be made that take the individual into account. In addition to lab testing that helps more clearly define imbalances associated with ADHD, natural treatment options that focus on balancing brain chemistry also exist. In some cases of ADHD, lab testing shows that certain neurotransmitters may be too high. In these circumstances, various herbs and nutrients can be recommended to “cool down” high neurotransmitter activity. Conversely, some cases show that there may not be enough of a certain neurotransmitter available. As a result, certain amino acids, the building blocks of neurotransmitters, can be recommended to support healthy messenger levels. In summary, ADHD is a growing health concern that requires some new angles for effective treatment. With the advent of lab testing and targeted treatment strategies, doctors and their patients now have an expanded toolbox from which to better understand what causes their condition and subsequently, more effective ways to treat it. It goes beyond the basic abdominal muscles and trains the core as a whole and central supportive structure. Exercises are included for the psoas, respiratory diaphragm, obliques, rectus abdominis and muscles of the lower back. The main workout is in 4 progressive sections (approximately 20 min each) that once mastered, are easily adapted into shorter routines. Benefits of practice include restored facility and function in the entire torso, improved body awareness, better biomechanics, and increased mobility and stability for the spine. Editor’s Note: This video offers some of the most clear and concise explanations of the core that I have ever encountered. With a distinct devotional groove, the album weaves together techno vibes with hand drums, female voices and sustained chords. It includes details on the chakra system in relation to yoga poses and offers in depth instruction on different types of pranayama and healing mudras. Clearly illustrated with Sanskrit names, it is packaged in an oversized format and spiral bound for easy reference. Editor’s Note: An excellent tool for building a home practice, this book comes highly recommended for yoga teachers and practitioners who are looking to create compelling practice experiences.
